Around 1.5mm to 2mm keeps dexterity high and takes the bite out of cool water. Thicker options trade some finger feel for the warmth you need when the water is genuinely cold, so pick according to the conditions you meet most.

The wrist is where cold water flushes in, so a snug cuff, ideally worn tucked under a wetsuit sleeve, keeps the warm water inside the glove where it belongs and does more for warmth than extra thickness alone.

Do gloves go over or under the wetsuit sleeve?

Tuck the wetsuit sleeve over the glove cuff. That way water running down your arm is shed over the outside of the glove rather than funnelled into it, which keeps the warm water trapped inside where it is doing its job.
